170mm Sea Blue Utility Knife | Handmade Kitchen Knives

 The colouring here is very dark, as the photos struggle to show. Almost black but with deep blue and purple tones. Some banding in the steel is visible in the patina bringing some red tones towards the center. Paired with a blue dyed walnut handle, shaped perfect for a pinch grip hold with the raised back and narrow front fitting the palm of the hand perfectly. 

160mm Stainless San-Mai Utility Knife | Handmade Kitchen Knives

Built for detail work and smaller general jobs, this one doesn't just look great with that translucent resin section, it also performs. The colouring on this one is a great base for a natural patina. The stainless cladding will stay pristine while the cutting edge gracefully ages showing character as it builds layers of blue red and grey.

Wrought Iron Three Piece Set | Handmade Kitchen Knives

 So rarely do you see a matching collection when it comes to handmade kitchen knives so this is a great opportunity to get a full collection and display centerpiece. Each knife is crafted for a specific purpose; the largest is a carving knife / chef knife crossover which is perfect for general purpose use. The long edge will allow for smooth slicing of larger bits of meat while the convex edge reduces friction and tearing. Then there's a santoku featuring a thinner edge for finer slicing of softer foods; potatoes and veg.. The pairing knife is of course the smallest in the set allowing for more delicate work or use on smaller chopping boards. All three have an ApexUltra cutting edge for the best cutting performance, with wrought iron cladding for a touch of class and history, as well as looking rather spectacular with that wood grain pattern. 

210mm Wrought iron Gyuto Chef Knife | Handmade Kitchen Knives

 This is a light weight knife, and yet it glides effortlessly through food leaving that lovely almost mirror finish on peppers and cucumber slices. Honestly going back to my old abused knives after testing these is depressing. Its about time I find an excuse to keep one.

Totally by chance. I used to build model aircraft and needed some metal parts, so I built a DIY forge and ended up making some miniature swords from nails. The more I looked into it, the bigger of a topic it became — each aspect a new skill to master — and I just carried on trying to improve. 


 2016 — I started full time. 


I’ve made a massive variety of things now, but on par with straight razors, kitchen knives require a very high level of quality to perform well. They gripped my attention long enough to become the foundation of my brand. 


Quality above all else. You can’t slap expensive materials on a poor design and make it worth more. 


Great kitchen knives require a lot of things, but personally I like a thin convex edge and enough blade height to use comfortably on larger foods without your hand hitting the board. 


I prefer carbon steels, or stainless-clad carbon steels in a San-Mai layered construction. Specifically ApexUltra — I think it holds a wonderful edge 


All of my blades are forged, but that is mainly to create the pattern, combine the right steels, and texture the flats of the blade. The profile and bevels are ground. This is the best way I’ve found to bring organic textures and crisp deliberate lines together. 


My workshop is a work in progress — always a new machine being built, new layout to suit a new workflow. 


Mostly collectors and anyone who appreciates good quality or one-of-a-kind tools. 


 

Attention to detail. Factories work to tolerances with allowed error and insurance factors, meaning edges are often thicker to reduce misuse damage.
It’s calculated for profit and acceptable performance.

With a handmade product, you get a piece of the maker’s soul. Every detail is thought out like artwork and refined for the best performance.


I have a new favourite from every batch I make. I’m proud of a lot of them, but they’re always improving.
Top of the list may be the stainless Damascus gyuto I forged last year. The carbon migration from the core through the stainless layers was something I’d not seen before. 


The Iron-Guard coating is becoming a bigger part of my work now.
